Easy and Healthy Potato Salad *Just Mayo*

Potato Salad - Vegan -
This simple and easy potato salad is sure to be a hit! It's vegan too!
  • 3lbs Red Potatoes
  • 1/2 Cup Just Mayo
  • 2 Tablespoons Dijon mustard
  • 2 Tablespoons Red wine vinegar
  • 1 Tablespoon Dried Dill
  • 1 Tablespoon Dried Parsley
  • 1/2 teaspoon Garlic Powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
Wash and dice your potatoes and place them in a large pot with water, bring to a boil, and cook till tender but not soft.While your potatoes are cooking, in a bowl, whisk together the rest of your ingredients (mayo, mustard, vinegar, and spices).Drain your potatoes and let them cool.Toss them in the bowl with the other ingredients.You can serve this right away if your potatoes are cool enough. I suggest putting your salad in the fridge for as long as possible, it tastes better the longer it is refrigerated.

LC & Minnie Mouse

I wouldn't say I'm the most fashion savvy person out there. My job requires a lot of moving around and getting drooled and spit up on so being "fashionable" isn't my first priority.
HOWEVER, I love to find cute and fashionable things to wear on nights out with the hubster or days on the town with friends.

Last Saturday I didn't have many plans so I thought a little retail therapy was in order.
Especially since I really wanted to go check out Lauren Conrad's new Minnie Mouse Collection at Kohls.

While I was on a budget and buying the ENTIRE collection was not in the cards for that day, I wanted to try on some pieces so I could purchase them in the next couple of weeks.

Below are two of my favorite's.

I love me some navy blue. Add some polka-dots and I'm a happy camper. I love this sleeveless top. I'm a big fan of tops that don't require wearing a uncomfortable strapless/racer back bra's. I also love shirts that are light and airy, like this one, for the hot sticky florida summers.
(btw the blue polka-dot top on the wall next to me in this picture isn't part of the collection but it one of her other tops I found on clearance ;) ) 

This other sleeveless was my second favorite. I loved the cream color and the sweet little minnie mouse designs.
Thats what I love most about this whole collection is how brilliantly LC incorporate little things here and there on all her designs so that you can easily point out are inspired by Minnie Mouse. From the prints, style, color, and cut outs.
They also have this top in navy with cute minnie bows and grandmother was sweet enough to purchase it for me for an early birthday gift.

My Review
This book review is LONG past due. I mean REALLY long past.
I realized the other day that this dear cookbook got stuck under a pile of my other cookbooks during one of my cleaning days and I UTTERLY TOTALLY forgot about it.

But, regardless of how long it took me to write up this review, this cookbooks is a great addition for you Gluten Free cooking needs!

I love Nancy Cain's gluten free frozen pizzas. Our local Publix carries them and they are my go to for gluten free frozen pizzas. Her crust is beyond amazing.
I attempted to make the same crust out of the cook book and it did not go well,
1. I am not a baker
2. I think I had the wrong type of flour
3. I was in a rush

BUT, that doesn't mean its not a good recipe! 
One day in the near future, I will make it with success and I will instagram my success to show y'all!

If you get the chance, you should pick this cookbook up and make some of the delicious food Nancy Cain has put her gluten free spin on!

Greek Spaghetti Squash

I love Spaghetti Squash. I think it is one of the coolest and tastiest veggies out there.
My husband... not so much.
But bless his heart, he lets me cook it every now and then for dinner.

I will take spaghetti squash any way, shape, or form.
So, I was excited when I found this recipe for Greek Spaghetti Squash that tastes amazing.
Greek Spaghetti Squash
1 Spaghetti Squash
1 tablespoon of butter (or butter substitute like Earth Balance)
1 15oz can of diced tomatoes
Feta cheese (as much or as little as you want)
1/2 tablespoon of oregano
1/2 lemon, juiced
salt and pepper to taste

Greek Spaghetti Squash


  • Cut your squash lengthwise, scoop out the seeds, and place cut side down on greased baking sheet for 30-35minuets at 375 degrees. You should be able to easily pierce the skin with a fork when done.
  • Once cooked, use a fork to scrape out the squash into strands and place in a bowl. Toss in all the other ingredients and serve warm.

 Greek Spaghetti Squash

I absolutely love this recipe. Its so easy. Great for a quick meal during the week.
I unfortunately added to much oregano when I made it.
So make sure if you are not a fan of it to not to over do it.

Crock Pot Balsamic Chicken

You're probably looking at the picture now and thinking,
"Are those peaches... with mushrooms??"

Don't worry, I thought the same too.

BUT It makes for the moistest crock-pot chicken you will ever make!
I've always stuggled with chicken staying moist in the crock-pot. It just never works out.

Well friends! I found the exception!
And here is how to make it!
Crock Pot Balsamic Chicken

2 pounds Chicken, Boneless Breasts
18 ounces Sliced Pears, Canned
1 cups slice Mushrooms
1/4 cups Balsamic Vinegar (or more if you want a stronger taste)
1 teaspoons Sea Salt
1/2 teaspoon Black Pepper
1/2 tablespoon Brown Sugar

Place all ingredients into slow cooker. Cook in slow cooker on low 4-6 hours or until chicken is tender.

Its really that easy. 
This recipe is also SUPER freezer friendly and can be made ahead of time and put in the freezer. Just make sure to thaw it a little before you place it in the crock pot.

Florida doesn't seem to know what "Spring" is.
This year it felt like the weather went from cold to hot within days. 

Even though spring feels like summer here, the flowers still bloom, the gardens grow, and its at least nice enough to go outside in the evenings.
My daily spring routine always includes getting home in the afternoon and going in the backyard with our pup with a yummy drink by my side.
Zevia has a new Spring campaign and I think it's pretty sweet.

I know when you look at my blog, I really don't have anything on here that screams

But, if you happen to follow me on twitter and instagram, its pretty obvious.

Like any other Star Wars fan out there, I remember the first time I watched A New Hope and from then on I have done nothing but love the movies. 

I think I started labeling myself as a "star wars nerd" when the special limited edition trading cards had their own special binder and I could easily tell you the difference between an AT-AT and an AT-ST.

I've never been loud about my slight obsession with the films.
However, if you watch my closely you'll find hidden clues. 
I may be drinking coffee out of my favorite star wars mug in my favorite star wars leggings.
Or you might hear a slight "whoosh" from my back pocket when I receive a text message.

Ok... maybe the clues aren't so hidden.... 

I'm that type of person who loves A LOT of things. Some things more then others.
Star Wars happens to be one of those things.

On this special "Star Wars" day I wanted to share 3 awesome things that you need to check out on this 
May the 4th.
 Nerd or not.

These just came out today and give us, who are waiting in anticipation for the new film, a better look at the new characters. Up till now we've only gotten bits and pieces of the new characters and who they are. These photos give you a little bit deeper glance and just add to the excitement December will bring. 
BTW I am pretty sure Poe Dameron is going to be my new favorite character. 

UF Star Wars Shirts:
Now this one is a little biased unless you are a Florida Gator fan.
I knew my school was cool but how did I not know they had UF themed Star Wars Shirts!
I need these in my life! 

I think I have mentioned Her Universe in a Friday Favorites post a while back, but I wanted to mention them again because I think it is the best site for all your girl nerd needs. Her Star Wars designs are on point and she even has lots of other nerdy clothes and accessories for your own nerd preference. 
Below is one of my favorite shirt designs at the moment but trust me, there are more to love.

fish tacos

Baked Fish Tacos

Who doesn't love a good fish taco??
Whenever our local Publix has their frozen wild caught Mahi Mahi on sale, I stock up so I have ample opportunities to cook with it.
(btw, here is a great post of why its better to buy wild caught fish)
Mahi Mahi is one of my favorite fish to cook with because you can do so much with it.
Like Fish Tacos.
Its taken me quite I while but I finally found a tasty Fish Taco recipe.
 It is of my own invention and is super husband approved!
Gluten Free Fish Tacos. Dairy Free Fish Tacos. Baked Fish Tacos

2 fillets of Mahi Mahi
1 cup of Pank Crumbs (or another type of coating)
Taco Seasoning (you can use my recipe here) 
2-3  egg's beaten
Organic Olive Oil Spray
Toppings of your choice.

Preheat your oven to 400 degree's

In a small bowl, combine your plain Panko and about 1-2Tbls of taco seasoning 
(its mostly up to you and how much of a taco taste you want)
In another small bowl, whisk up the egg's.
Set both bowls aside.

Cut the Mahi into cube size pieces (see picture below). 
Mahi is a flaky fish so you might have to cut some pieces at an angle.
Dip each piece in the egg mixture, then in the tortilla and taco seasoning mixture.  
Place on a greased baking sheet lined with aluminum foil.

Bake your fish for about 10-15 minutes or until the fish is white and flaky when you cut into it.

Serve over rice or on gluten-free corn tortillas and top with your favorite toppings
I also like to whip up a nice white sauce made out of mayo ( I use and love just mayo), lemon juice, season all, and garlic salt.
And VIOLA! You have some yummy, gluten-free, fish tacos!

UPDATED 5/23/17: I find you can also throw these in your air fryer. Cuts on time and cooks them just as well!
