Easy and Healthy Potato Salad *Just Mayo*

Potato Salad - Vegan -
This simple and easy potato salad is sure to be a hit! It's vegan too!
Ingredients
  • 3lbs Red Potatoes
  • 1/2 Cup Just Mayo
  • 2 Tablespoons Dijon mustard
  • 2 Tablespoons Red wine vinegar
  • 1 Tablespoon Dried Dill
  • 1 Tablespoon Dried Parsley
  • 1/2 teaspoon Garlic Powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
Instructions
Wash and dice your potatoes and place them in a large pot with water, bring to a boil, and cook till tender but not soft.While your potatoes are cooking, in a bowl, whisk together the rest of your ingredients (mayo, mustard, vinegar, and spices).Drain your potatoes and let them cool.Toss them in the bowl with the other ingredients.You can serve this right away if your potatoes are cool enough. I suggest putting your salad in the fridge for as long as possible, it tastes better the longer it is refrigerated.
