2012/2013 Goals

My 2012 Goals -

  • Write in my journal at least once a week. ~ This happened on and off. It depended on how my week went. lol
  • Be more graceful and kind like Audrey and Austen. ~ I think i did ok on this one, its always something i'm always going to work on
  • Have a fun and eventful summer. - This summer was one i want to remember and also forget. I want to remember the fun times I had watching my "little sis" but then I also want to forget who I was this summer, because to be honest, i wasn't somebody I would be proud of.
  • Get an A in at least one of my four classes this semester. ~ Did this plus some! I got 2 A's in the spring semester + 2 A's in the fall semester. 
  • Continue to read more. ~ ACED this one. I'm always a'reading
  • Get my room put together. ~ *looks around room* I think I did pretty good! 
  • Enjoy life and Worry Less. ~ Still working on this one, I have my good days and bad days. Im a pretty optimistic person but not all the time, theres sometimes my anxiety gets the best of me.

ALRIGHT. Time for my 2013 goals.
  • Take at least one trip out of state
  • Cook more and build up my recipe binder
  • Grow my blog
  • Serve the Lord better
  • Be the best person I can be
  • Smile more often
Yea, some of those are a little cliche, but sometimes the cliche ones are the best ones. :)
I, of course, have more that I will come up with later probably. However, I am looking forward to this new year and what God has in store for me. I'm so grateful for all that He has done for me this year. I am especially grateful for the man who Christ has brought into my life and I can wait to see what the new year brings for me and for him.

Christmas - Part 2

Christmas Day was probably the most relaxed Christmas day I've ever had. Total Floridian Christmas. We just relaxed, watched the telly, stuffed our faces and didn't get out of our PJ's till 3pm and then stuff our faces later on with a roast from heaven (well not heaven, but Maryland, close enough) 

One of my first gifts. A "Tangled" inspired necklace from Sis. It has Pascal on it!
 (yes, Tangled is one of my favorite movies, don't judge) 

Mister opening his first present. A phone case with a "minion" on it from Despicable Me. One of his favorites.

My reaction to opening....



Yup. ALMOST cried. I didn't actually fully cry about it till later. Delayed reaction. 

I was an awesome girlfriend too and got him 3 tiny nerf guns for his stocking.
Cause that's how our relationship works. He buys me a beautiful necklace, and I buy him nerf guns.
Funnest toys ever! Though I was no longer an awesome girlfriend when i hit him in the eye. Game over. 

Like i said. Christmas day for me =ed total relaxing.
Example: I colored for hours in the huge princess coloring book mom bough us. I turned in to a 6 year old for a couple hours. SO relaxing.

And can you believe it is almost the end of 2012! Ahh. Hopefully i will get one of those cliche "new year" posts up soon!


Christmas - Part 1

Christmas was so wonderful this year. For many reasons. I'm not gonna bore you with 2 many details and I'm going to split it up into 2 parts so I don't overload you with pictures. You're welcome.

Part 1.
Christmas Eve.

Christmas eve was pretty quiet for the majority of the day. I relaxed like most of Americans in the morning then got right to work making me GF sweet and sour chicken for our mini party in the evening. 

Then after slaving over the hot stove (not really slaving, more like salivating cause the SandS chicken smelled so good), I beautified myself for church that evening and prepared myself to wrangle the children, as it was my job to do that that night during the Christmas performance.

Then we came home to ridiculousness amounts of chines food. 85% of which I could not eat but still it was delicious looking never the less.

Then sis and I sat down played a exciting (not really but still) game of Monopoly with friends. 
and yes, the only version of monopoly we own is Disney. Don't judge. 

Then he arrived from a long night of work and we proceeded to open our Christmas PJ's.
We made him act surprised even though he knew what PJ pants he was getting... 

Then it was time for bed!!

My break.. so far..

(yes this flower is from the mister. Its what I get for making him dinner. I still would have made him dinner minus the flower, but i'm not complaining ;) ) 

So my break so far has consisted of---

  • watching church kids for over 8 hours on a Saturday afternoon (gotta make that $$) 
  • made dinner for the mister while he was at work so he had food to come home to, gotta practice my great cooking skills. 
  • worked on college applications.......
  • read. I finished Reached in 2 days and Im working on Beautiful Redemption as we speak!! Will review for you guys when i get the chance.
  • Attempted to bake but we had no eggs... 

Yes, I am having such a thrilling first week of Christmas break as you can tell. lol.
However i still can't believe Christmas is really next week. Its just mind boggling, its like i had school then BAM! CHRISTMAS..
I can't wait for monday though. I get to work with the little one's during out Christmas service which is always a interesting experience.

Finally done this semester of school.

Thank GOD.
This semester has been a crazy one. The first half emotionally, was horrible. I had so much stuff going on , I swear I don't know how I got through classes sometimes.
Well, I kind of know how I did it. I always remembered Philippians 4:13
I can do all this through him who gives me strength.

It is truly my life verse. I use it in any situation.
Those 11 words can calm me down in an instant. I've probably said this verse to myself more times then ever before this semester.

And, I always try to remember my problems are petty compared to some peoples. I know there were other people in my own classes who were dealing with much crazier crap then I was and I need to suck it up and realize that my issues are nothing compared to theirs.

And I was able to get through the last half of the semester because of this guy ---


Yes im going to get mushy. Yes I'm going to brag. 
But hey, this is my blog and I can do what I want.

I don't wanna hear ANYONE say God's timing isn't perfect.
No lie, not a day after I finally gave some of my petty issues to God, this guy came along.
 And he's been nothing but the greatest blessing to me ever since.
Not a day goes by that I don't thank God for him.

I'm a blogging example that no matter how sucky things seem or how many times you're confused or sad. Don't give up. God has it handled. You may not see it. You may not believe it sometimes. But HE does.
AND when you have the moment when you realize that He has it under control and everything is gonna be ok, be prepared for an awesome blessing and sense of peace.

Ok, motivational moment is over. 
Time for Christmas! 

Oh and Jaxson feels as though he hasn't gotten enough blog facetime in a while. So here you go..


R4U -Quinoa Mac and Cheese

Recipe 4 You! 

Gluten Free Quinoa Mac and Cheese:

  • 1 pinch salt
  • 3 dashes seasoning salt
  • 2 garlic cloves, minced
  • 2 large eggs
  • 1 cup soymilk or 1 cup nonfat milk
  • 1 1/2 cups cheddar cheese, grated
  • 1 cup panko, GF bread crumbs, or tortilla chips:crushed(what i used)  

Lightly saute (with garlic,salt,season salt) any veggies you would like in this dish. (I used mixed veggies) .


Cook quinoa to packaged instructions until fully cooked. ( I already had quinoa ready) 

Preheat oven to 350°F Coat 13x9 inch dish( or 8 individual ramekins) with cooking spray.

Whisk together eggs and milk in large bowl. Fold in quinoa mixture and cheese. Stir very well and let some of the cheese melt. 

Transfer to prepared baking dish and if using 
panko, GF bread crumbs, or tortilla chips (what i used) add now and bake 30-35 mins, until browned. .


All done! 


I think next time i'll use just corn but this was so delish. I was such a fat kid and ate like half of the dish :)

Sometimes I enjoy the extra warmth
I also don't enjoy the 5am wakeup bark.
