Gluten Free and Vegan Irish Colcannon

I really tried to come up with a unique Irish recipe for one of my favorite holidays, St. Patricks Day. You'd think after actually going to Ireland I would be able to think of something uniquely different to make. But the classics, like bangers and mash, are tried and true. In Ireland and here in the U.S.

Gluten Free and Vegan Irish Colcannon
A classic Irish dish with a gluten-free and vegan twist. Perfect for St. Patricks Day
Ingredients
  • 3lbs or 6 large Peeled Yukon or Russet Potatoes*
  • half, shredded Small head of cabbage
  • 1/4 cup Green Onions or Chives
  • 1/4 cup Vegan Butter
  • 1 tsp Sea Salt
  • 1/4 tsp Ground Black Pepper
  • 3/4 cup Almond Milk
Instructions
Wash and peel the potatoes. Cut into large chunks and place into a large pot of water and bring to boil.While the potatoes are cooking. Shred cabbage and place into a medium pot and cover with water and bring to boil. Once at a boil, reduce the heat for the cabbage and simmer till cabbage turns a darker color. Once the potatoes are done the cooking (soft enough to mash) drain the water from the pan.Add in your vegan buttery spread and mash. Then add in your almond milk (starting with 3/4 cup and adding more if needed)Then add in the cooked (and drained) cabbage, salt and pepper, and chives (or green onions).Serve immediately.

The day I made this recipe, using Applegate chicken sausage (which is a personal favorite), I made a "beefless",  gluten free, and dairy free, bangers and mash. It's not very pretty to photography but it was so tasty.
It's fairly simple to make. Just heat up any sausage (even VEGAN sausage) you prefer and use this recipe for the gravy!
