Dairy and Gluten Free Pasta Alfredo

I miss non-gluten free food sometimes. One of those being creamy sauces that you can get on your pasta. I am so envious when my husband (who is not fully gluten free) decides to treat himself to a heaping bowl of pasta alfredo at Olive Garden. I just give him the stink eye across the table as I eat my gluten free BLEH meal.


I found this VERY simple Pasta Alfredo recipe and it was a hit with the hubster.
It doesn't taste exactly like Alfredo, but its pretty dang close.

You can also add any veggies or protein you would like to your pasta too.
We added some broccoli and leftover chicken to ours.

INGREDIENTS
1 clove of garlic
1 teaspoon extra virgin olive oil
1 cup cauliflower (100 grams)
¾ cup almond milk (175 milliliters) *I used Silk Cashew Milk*
Salt and freshly ground pepper, to taste
1 tablespoon nutritional yeast
½ tablespoon lemon juice
A box of gluten-free uncooked spaghetti *I used Ancient Grain quinoa spaghetti*


INSTRUCTIONS
Cook the minced garlic with olive oil until golden brown, about 3-4 minutes.
Add the almond milk and bring it to boil. Add the salt, pepper, chopped cauliflower and cook until it's soft, about 7 minutes.
Transfer to a blender and add the nutritional yeast and lemon juice. Blend until smooth.
Cook the pasta al dente according to package directions.
Drain the pasta and pour it into the pan with the sauce. Stir and serve.

 love how simple this recipe is.
However, I will say I have a love/hate relationship with Gluten Free pasta. I love the taste but I hate that if you cook it just over a minuet longer then needed it will get clumpy (hence the not so pretty picture of my pasta)

But, It tastes delicious so thats all that matters ;)
