Friday Favorites

I actually remembered to write up a Friday Favorites this week! Thank you to my brain for remembering!

SO Delicious Creamer :
I can't even begin to tell you how much I love this stuff.  My local Walmart is not the greatest about keeping items well stocked, so sometimes it is a hit or miss when it comes to getting my favorite items. However, I was so happy when I saw they had So Delicious Coconut Milk Creamer this week. Their Coconut Creamer is my favorite. It's so sweet and light. Their almond milk creamer is good too but I prefer the coconut. It's a great addition to your morning cup of joe.
I've always had a sensitive stomach in the morning and I noticed since using coconut creamer it has greatly reduced my nausea in the morning after my lovely cup of coffee.

Gluten Free Chocolate Chip Nut Butter Cookie:
I saw this recipe on Taylor's blog Gluten Away. I can't wait to try this myself. It is VERY simple and looks so delicious :) A perfect cold day snack!

I found this shop while browsing through pinterest the other day. I fell in love with all the clothes. They have a very southern casual feel which I love and they aren't crazy expensive. This tee below is one of my favorites..

Them Boot's

Cowgirl Boot Adventures

I love's these boots.
Ever since I bought them, I have dubbed them my "adventure" boot's because I bought them as a gift for myself to wear on my wedding day and getting married was my next "adventure".
I got my first pair of boot's when I was around 7 and started horseback riding.
I loved those boot's. I wore them everywhere and it was a sad day when I no longer fit into them.
I can now call those my beginner "adventure" boots.

Call me weird, but I tend to connect memories with clothes and shoes.
I still have the shirt I was wearing when I met Steve and I have a simple pair of laced flats that I bought on our honeymoon.
Every time I wear these items I remember such sweet moments from my past.
I hope to one day wear these boots as I walk in the countryside of Ireland with my husband on our dream vacation or as I purchase a new little pair of boots for our future child. Both of these things won't be for a while but they will be a great step on then next adventure.

 Some people have trinkets that remind them of moments, I have clothes.

Super Bowl Prep

The big day is just a week away and I've started my preparation for the big day.
While neither of our teams made it to the Super Bowl, we still like to throw a fun shindig.

"With a great party come's great "pinsperation""

Below are some of my inspirations for our Super Bowl Party.
(thank goodness for pinterest ;) ) 

I can't wait to decorate our chalkboard for the game. We grabbed some colored chalk at walmart the other day and even though I'm not most creative, I can't wait to try. 

I don't know if I'll have a chance to do this but I think this table set up is adorable.
It's perfect for keeping your living room table clean ;) 

Food is probably the most important item at a Game Day Party. Wings and Dips are my specialty.
Here are some of the recipes I'm going to venture to make this year..

I don't know why but I've been CRAVING some Onion Rings lately. And of course, being Gluten Free, I don't get to have them often ( Side Note; Raglan Road at Downtown Disney has THE BEST GF onion rings ), but I found this recipe and I am thinking about trying it out at our super bowl party.

Baked Lemon Chicken

This is one of our favorite dishes at the moment. It reminds us of the chicken we order at our local Greek Restaurant. Of course it isn't as good but it sure is delicious and full of flavor.

Baked Lemon Chicken * Gluten Free *
*Gluten Free*

1-2 Tbsp Olive Oil
5-6 Cloves garlic, minced (or a spoonful of minced garlic)
Zest from 1 lemon
Juice from 1 lemon (or lemon juice, add as much or as little as you want)
1/3 cup Chicken Broth
½ tsp dried oregano
½ tsp of thyme
2-3 Boneless, Skinless Chicken breats
Sea salt and Cracked Pepper, to taste
1 Lemon cut into 4 wedges (use lemon you used for zest)

:: Directions ::
  • Preheat your oven to 400 degrees. Coat a baking dish with cooking spray of your choice
  • Season both sides of the chicken breasts with sea salt and freshly cracked pepper, to taste, and set aside.
  • Heat the olive oil in a skillet over medium heat; add the minced garlic and cook, stirring constantly, for 1 minute, making sure not to burn the garlic. Add the chicken broth, lemon zest, lemon juice, oregano, and thyme to the pan and cook for a few minuets, being careful not to burn the mixture.
  • Pour the mixture into the baking dish over the chicken Place the lemon wedges around the chicken in the dish.
  • Place into the oven and bake, for 30-40 minutes or until the chicken is cooked through. Remove from the oven and let the meat rest for 5 minutes.


Its so quiet

Sorry I have been a little quiet this past week. This past week my church participated in a week of fasting and praying. So, I took a little time off from the amount of time I spend on the interwebs to participate and grow closer to Him.

I have to say I enjoyed not being on my social media as much as I usually am.
I know.
 I let myself get on to check email and scroll through instagram once a day but thats about it. It felt good to take a little break. I did A LOT of reading and some straightening up of my house.
I found out that getting on Facebook after not being on for a couple days was a bit overwhelming.

I am happy to be back now. Looking forward to putting out some blog post's for you guys soon!

chicken noodle soup

Crock Pot Chicken Noodle Soup

I've been on a roll with these crock pot recipes lately.
I only have one night a week that I really have time to cook a meal when I get home, so that leads to a lot of crock pot meals here at our house.
A couple of weeks ago I was craving some yummy chicken noodle soup like crazy. The weather here in Florida has finally cooled down enough that the idea of a nice warm cup of soup is more appealing.
So, I figured I'd try my best to make a crock pot version that is also gluten free (which was kind of daunting).
I accomplished my goal and my husband liked it so much he was ok with me making it a week after I made it the first time ;)

Crock Pot Chicken Noodle Soup *Gluten Free*

1Lbs of skinless boneless chicken breasts thawed or even slightly thawed
 (i used about 3 chicken breasts)
1tbs of olive oil
8 cups of chicken broth ( I make mine with this )
3 larger carrots chopped
3 celery stalks chopped *
1 small yellow onion chopped
2 cloves of garlic minced
1tsp of dried thyme
1/2tsp of dried rosemary
1tsp of dried dill
GF egg noodles OR I used GF Elbow Macaroni (what I used)
Salt and Pepper to taste
*all vegetables used in my recipe are organic unless noted with the asterisk

  • Combined all the ingredients except the Noodles/Macaroni in a crock pot (I used a 4qt).
  • Cook for 4-6hrs on high or 6-8hrs on low (depending on how long you want/need it to cook) 
  •  Pull the chicken out and chop.
  • Add the chicken back into the crock pot and add the noodles/macaroni and cook until the noodles/macaroni is tender. About 10-15 minuets (GF pasta make take less or more time)

The March Family Letters ::
I love finding new web series on youtube. My favorite "The New Adventures of Peter and Wendy" has been on a hiatus so I've been a little sad about having no Youtube series to watch. I was so excited to see that Pemberley Digital came out with a new series called The March Family Letters It is a "reimagining" of "Little Women" by Louisa May Alcott.

My new camera :: 
I feel in love with my new Canon T3i within the first couple of shots. It also helps the first few pictures were of this cutie.

For my parents Christmas Eve "Irish Potluck", I made Gina's Too-Good-To-Be-True Baked Potato Soup.
It was to die for! I didn't feel bad about going for seconds and I even indulged in some leftovers the next day for lunch.
