Simple Potato Salad - Dairy Free!

I'm a pretty repetitive person. Maybe it's because I'm an introvert, or maybe its because my work strives on repetitiveness for success (#nannylife).
Whatever the case, I try not to be too repetitive in my cooking.
That is, until I find a good "bring to potluck/friends house for dinner" side dish. Then I make that sucker ALL THE TIME.

Thanks to Pinterest (all hail pinterest) I found this recipe for potato salad and tweaked it to make it my own.
My secret ingredient?? 
Have you guys tried this stuff??? It is probably one of my FAVORITE dairy/gluten/egg free products out there because it tastes JUST like regular mayonnaise but without all the junk.
Being from the south, mayonnaise is everything and it is so nice to find a great product out on the market that is a great alternative to the basic.

Anyway, back to this amazing Potato Salad Recipe.

3 pounds small red potatoes (I used organic potatoes)
½ cup of Just Mayo
2 tablespoons Dijon mustard (I used the Publix Organic Dijon)
2 tablespoons red wine vinegar (I used the Publix Organic Red Wine)
1 tablespoon dried dill
1 tablespoon dried parsley
½ teaspoon garlic powder
½ teaspoon kosher salt
½ teaspoon ground black pepper
  • Wash and dice your potatoes and place them in a large pot with water, bring to a boil, and cook till tender but not soft.
  • While your potatoes are cooking, in a bowl, whisk together the rest of your ingredients (mayo,mustard,vinegar, and spices).
  • Drain your potatoes and let them cool.
  • Toss them in the bowl with the other ingredients.
  • You can serve this right away if your potatoes are cool enough. I suggest putting your salad in the fridge for as long as possible, it tastes better the longer it is refrigerated.
