EASY Creamy Potato Soup (Vegan/Gluten Free)

Florida seemed to realize it needed to participate in winter over the weekend,
This gives me the perfect excuse to whip up this recipe because cold weather calls for warm and creamy soups.  
EASY Creamy Potato Soup (Vegan/Gluten Free)

Easy Creamy Potato Soup  
  • 3lbs of Russet Potatoes (Peeled and diced about 1inch) 
  • 32oz of Chicken Stock (or Veggie Stock for Vegan option)
  • 1/2 White Onion (diced)
  • 1 cup of unsweetened coconut milk from the can (make sure to stir it because it does separate)
  • 1/4 tsp garlic powder
  • 1 and 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/4 dried chives
In a large soup/stock pot add stock, onion, and potatoes (the stock won't cover the potatoes completely and that's ok). Bring to the boil and cook for about 8 minutes. Potatoes should be soft enough to pierce with a fork but don't overcook.

Once the potatoes are soft, turn the stove off and remove 1 cup of the potatoes from the pot with a slotted spoon and set aside. 

In your soup pot add in coconut milk to your potato/broth. Using an immersion blender, blender until smooth.
Next, add in your spices and the potatoes you set aside. Give it a good stir and serve with your favorite potato toppings!
