12 Thoughts You have while taking your Midterms :: Told In Star Wars Gif's

I am not a good test taker. I came to term with this in the fall semester of my sophomore year of college. I could do weekly 10 question quiz's like a boss, turn in assignments on time, and participate in class like I was a pro, but put me in front of a midterm or final and I'm no longer "the boss".
I don't really know why. I study and prepare, yet I just can never ace those dreaded midterms and finals. Even on an open note test I still wouldn't get any higher then a 80. Its just my life.

So I thought I would share what I feel most "not good test takers" think as they take their midterms. And of course, through Star Wars gif's as any Star Wars nerd would.

By the Way the really title of this post should be

Studying:
"Oh I know this, I'll do great on these midterm

5 minutes before the Midterm trying to figure out whats the most you need to get to pass and how fast you need to go through each question to have extra time to go over ones I don't know.

When the test starts

When you get to a fill in the blank question you have absolutely no idea what the answer is so you say "Screw it".

Easy Lo Mein *Gluten Free*

I think its easy to say that Chinese type meals are my favorite to make. 
Seeing that the last few recipes on here have been Chinese.

I love this recipe because you can mix and match veggies to make it your own! 
And it's super quick to make! 15 minutes tops! 
:What You Will Need: 
8 ounces of gluten free spaghetti (I use Ancient Harvest)
1 tablespoon olive oil
2 cloves garlic, minced
2 cups of zucchini (original recipe calls for mushrooms but the hubs doesn't like those ;)) 
1 red bell pepper cut into small pieces
1 small yellow onion chopped
1 carrots shredded or cut small
1/2 cup edamame or snow peas
3 cups baby spinach

:For Sauce:
2 tablespoons gluten free soy sauce
2 teaspoons sugar
1 teaspoon sesame oil
1/2 teaspoon ground ginger
1/2 teaspoon Sriracha, or more, to taste*optional if you don't like spicy* 
:What to do: 
In a small bowl, whisk together soy sauce, sugar, sesame oil, ginger and Sriracha (if using); set aside.
In a large pot of boiling water, cook noodles according to package instructions; drain well.
Heat olive oil in a large skillet or wok over medium high heat. 
Add garlic, zucchini, bell pepper , onion, and carrot. Cook, stirring frequently, until tender.
 Stir in edamame/snow peas and spinach until the spinach has wilted, about 2-3 minutes.
Stir in spaghetti and soy sauce mixture, and gently toss to combine.

My Favorite Gluten Free Pizza Dough

I think a lot of people assume being gluten free means a life full of tasteless food. However, in my opinion it is far from tasteless. Some of the best food I've ever had was gluten free. Including gluten free pizza! I pride myself on having tried a good majority of the gluten free pizza and pizza dough on the market in my area.
Today I want to share my top 3 gluten free pizzas with you! If you have any pizza suggestions too let me know!

My Favorite Gluten Free Pizza Dough
These are in no particular order.
Bob's Red Mill
I think Bobs Red Mill is the king of all things gluten free. If you need to make something, they have a mix for it or the flour for it. I think their crust is definitely one of the thickest out there and is perfect for newbies just dipping their foot into the gluten free waters. You can find most of their mixes in your local health food store or even grocery store.

Against the Grain
This is definitely one of the best frozen pizzas you'll find in the frozen food isle. You can even buy just the crust so you can add your own sauce and toppings. The crust itself is just the right thickness and texture that its a perfect base for a gluten free pizza.
I've seen them in both health food stores and grocery stores.

Deland Bakery Pizza Dough
Ok, so I'm like 95% biased that this is a hidden gem that GF Floridians need to find a way to get a hold of. I am blessed enough to live just a couple blocks away from this local market and every Friday the workers know I come in for two things.
1. So Delicious Coffee Creamer
2. Pizza Dough
It's been hard to find a GF pizza that the husbands likes as well. However, this is his favorite by far.

As far as where you can get this. Floridians might be able to find some at local Orlando area Whole Foods (don't quote me on that, I know they stock their bread) but you might need to take a trek to Deland to get your hands on some ;)
