Broccoli Crunch Salad

Y'all it's starting to warm up and be downright hot here in the sunshine state.
 Meaning the hot dishes are rotating to colder crisper dishes.
You know salads are kind of my forte. Pasta, lettuce, and veggie.  I love a good crisp salad.

So where is the crunch in this Broccoli CRUNCH salad? Well, it comes from a few things.
1. The Broccoli is not cooked. Just rinse, cut, and throw into a bowl. 
2. Corn - Yes, not the most nutritionally based veggie but it gives some extra sweet crunch.
3. Fakecon (Fake Bacon) Bits- Yup, you heard that right. Frontier has a great vegetarian bacon bits perfect for this salad - or you can make some homemade with this recipe.

Broccoli Crunch Salad - Vegan and Gluten Free
Crunch, tangy, and packed with veggies
  • 3 cups chopped Broccoli Floretts
  • 1 cup Shredded Carrot
  • 1 can Sweet Corn
  • 1/2 cup Vegan Mayo
  • 1 tablespoon Sugar
  • 1 and 1/2 tablespoon Lemon Juice
  • 1 tablespoon Apple Cider Vinegar
  • to taste Salt and Pepper
  • to taste Fake Bacon Bits *Optional
  • to taste Poppy Seeds *Optional
Throw all your veggies in a large bowl and set aside (broccoli, corn, and carrot). In another bowl make your dressing for the veggies. Mix together the mayo, lemon juice, sugar, vinegar, salt, and pepper.  Pour the dressing over your veggies and mix until all the veggies are coated. Spinkle over some fake bacon bits and poppy seeds (if desired). Throw it in the fridge till you are ready to serve
