Crock Pot Chicken Noodle Soup

I've been on a roll with these crock pot recipes lately.
I only have one night a week that I really have time to cook a meal when I get home, so that leads to a lot of crock pot meals here at our house.
A couple of weeks ago I was craving some yummy chicken noodle soup like crazy. The weather here in Florida has finally cooled down enough that the idea of a nice warm cup of soup is more appealing.
So, I figured I'd try my best to make a crock pot version that is also gluten free (which was kind of daunting).
I accomplished my goal and my husband liked it so much he was ok with me making it a week after I made it the first time ;)

Crock Pot Chicken Noodle Soup *Gluten Free*

Ingredients 
1Lbs of skinless boneless chicken breasts thawed or even slightly thawed
 (i used about 3 chicken breasts)
1tbs of olive oil
8 cups of chicken broth ( I make mine with this )
3 larger carrots chopped
3 celery stalks chopped *
1 small yellow onion chopped
2 cloves of garlic minced
1tsp of dried thyme
1/2tsp of dried rosemary
1tsp of dried dill
GF egg noodles OR I used GF Elbow Macaroni (what I used)
Salt and Pepper to taste
*all vegetables used in my recipe are organic unless noted with the asterisk


  • Combined all the ingredients except the Noodles/Macaroni in a crock pot (I used a 4qt).
  • Cook for 4-6hrs on high or 6-8hrs on low (depending on how long you want/need it to cook) 
  •  Pull the chicken out and chop.
  • Add the chicken back into the crock pot and add the noodles/macaroni and cook until the noodles/macaroni is tender. About 10-15 minuets (GF pasta make take less or more time)
