This has become one of our favorite meals. Even though its a tad warm to eat on a summer day but just turn up that air conditioner and enjoy a nice bowl of this yumminess over some white rice.
1 &1/2 cups of cooked lentils
1 & 1/2 cups of canned tomato sauce/puree
A large onion, finely diced
3-4 Red potatoes (depending on size, less if bigger) cubed
1/2 cup of unsweetened coconut milk
2-3 TBSP butter
1/2 tsp kosher salt
1/2 tsp dried oregano
1/2 tsp cumin
freshly ground black pepper, to taste
red pepper flakes, to taste
Dump everything into your crock pot.
Cook for 4 hours on high or 6-8 hours on low
Serve over some yummy (organic) white rice!
